The name "Pullman" comes from the luxury sleeper train cars by the Pullman Company, which served this unique square-shaped bread to its passengers. Pullman bread is distinctively defined by its shape, texture, and the method of baking it. Often using a "Pullman pan" to create the iconic shape. And the bread itself has a fine and even crumb with a soft texture, which is due to its tight crumb structure.
